Scotch Eggs

I love breakfast foods…all day long.  The easier and more portable, the better.  Scotch Eggs may be the easiest AND most portable breakfast food in my arsenal.  Legit: sausage + eggs.  Let’s cook!

Serving Size: 1 egg

  • 2 lbs Jennie O Turkey Sausage (in rolls, not the precooked or links)
  • 1 dozen hard boiled eggs


  1. Preheat oven to 400.
  2. Hard boil your eggs. (I do mine in the InstantPot and you can read the recipe here
  3. Peel eggs.
  4. Wrap eggs in sausage.
  5. Bake in muffin tin for 35 minutes.
