I love breakfast foods…all day long. The easier and more portable, the better. Scotch Eggs may be the easiest AND most portable breakfast food in my arsenal. Legit: sausage + eggs. Let’s cook!
- 2 lbs Jennie O Turkey Sausage (in rolls, not the precooked or links)
- 1 dozen hard boiled eggs
- Preheat oven to 400.
- Hard boil your eggs. (I do mine in the InstantPot and you can read the recipe here
- Peel eggs.
- Wrap eggs in sausage.
- Bake in muffin tin for 35 minutes.
