General Tso’s Chicken and Cauli Fried Rice

Who says you can’t enjoy your favorite Chinese take out recipe when you’re counting your macros?  Grab some chopsticks and you’ll never know this isn’t the General Tso’s Chicken you’re used to…other than not feeling bloated after you eat it.  😉

I. Love. Chinese. Food.

And General Tso’s is my go-to order.  It’s sweet, savory, and spicy, the holy grail of flavor in my world.

With this macro-hacked recipe, you can have all the things you love about General Tso’s AND fried rice.  Deprivation isn’t a good look on anyone.  Around here you get to have what you love…just in the hacked version. 🙂

General Tso's Chicken and Cauli Fried Rice

General Tso's Chicken and Cauli Fried Rice

Yield: 6 servings

Ingredients

FOR THE CHICKEN

  • 2 1/2 lbs boneless, skinless chicken breasts, cut into
  • bite-sized pieces
  • 1 Tbs garlic, minced
  • 150g onion, sliced
  • 400g broccoli, chopped into large florets
  • 250g sugar snap peas
  • 250g carrots, cut into thick matchsticks
  • 2 Tbs olive or coconut oil

FOR THE CAULI FRIED RICE

  • 1 bag frozen riced cauliflower
  • 1 bag frozen cauliflower w/ veggies
  • 2 eggs
  • 1-2 Tbs low sodium soy sauce
  • 1 tsp ginger
  • Red pepper flakes, to taste
  • 1 Tbs butter

FOR THE MARINADE

  • 3 Tbs low sodium soy sauce
  • 2 Tbs red wine or rice wine vinegar
  • 1 chicken bouillon cube, crushed
  • 3 Tbs water
  • 2 Tbs REAL maple syrup
  • 1 tsp sesame seed oil
  • 1 Tbs cornstarch
  • 1 Tbs minced garlic
  • 2 tsp ginger
  • Red pepper flakes, to taste

Instructions

FOR THE CHICKEN AND SAUCE

1. Heat oil in the pan.

2. Add chicken, garlic, and veggies.

3. Stir and flip as needed to get everything cooked evenly.

4. While that’s cooking, mix together sauce. (mix cornstarch with water FIRST, then add it to the rest of the mix).

5. When veggies are as tender as you want them and chicken is cooked through (juices run clear, center no longer pink), add sauce and stir to coat everything.

FOR THE CAULI FRIED RICE

1. Melt butter in pan.

2. Add all ingredients to skillet on high heat (no need to thaw or heat riced cauliflower).

3. Cook until veggies are warm and eggs are cooked through.
